Homemade Date Energy Bars


I was asked this question TWICE this week about energy bars (specially Cliff bars) so I wanted to share this (in my opinion) ... I believe them to be convenient, but "energy" is code for calories, mostly in the form of refined grains and processed sugar. Manufacturers have to list sugar (or whatever they like to call it) FIRST if the bar contains more of it than any other ingredient. So, check the label and read the # of sugar grams.... if you go with store bought bars, stick with ones that are fruit or nut based (like Larabar or Pure Organic). Or, make your own ----> MY EASY PEASY HEALTHY ENERGY BARS In food processor, combine: -1c dates -1c toasted almonds -1/4 tsp vanilla extract -1/4 c almond butter -1-3Tbs water -Puree until mixture sticks together. Add more water if necessary. Using your hands, press the mixture into a 2-qt. square (8x8x2) baking dish and refrigerate. Once chilled, cut into 36 squares and store in an airtight container in the fridge for up to a week!
