Nothing Says FALL Like Pumpkin Everything -- But Especially Muffins!
These were the perfect treat for after dinner tonight! My kiddos begged for more, but I only let them have one.☝🏻 These muffins are gluten free, refined sugar free, oil free, dairy free and full of flavor! 🎃
Recipe: 1 cup pumpkin purée 2 eggs 1/4 cup unsweetened almond or cashew milk 1/2 cup pure maple syrup 4 T almond butter 1 T vanilla extract 2 1/4 cup Rolled Oats 1 tsp baking powder 1/2 tsp baking soda 1 tsp cinnamon 1/2 tsp salt 1/2 cup dark chocolate chips
Instructions: Preheat oven to 350.
Combine all the wet ingredients together in a blender or food processor. Layer dry ingredients (except chocolate chips) on top. Blend until mixed up well.
Stir in chocolate chips. Pour evenly into 12 count muffin tin. Use liners or spray the pan! Bake for 22 minutes. (Recipe courtesy of Making Thyme for your Health) Enjoy!!!
